Comfort Food 101 - The Reuben Sandwich w/ Potato Salad

Grilled sandwiches are one of those quintessential comfort foods. Offering just the perfect combination of warmth and love. The hot meat with gooey cheese running down the sides. The crunch of the toasted bread add the perfect final touch to complete the great comforting feel. I like many different types of grilled sandwiches; hot ham & cheese, patty melts, tuna melts, and of course the famous Reuben. I love Reubens very much and my Mom loves them too. So tonight we had our favorite hot sandwiches The Reuben.

Reuben Sandwich

Yield 4 Sandwiches

Ingredients

1 pound Corned beef
8 ounces Sauerkraut, drained
4 slices Swiss cheese
4 ounces 1000 island dressing
8 slices Rye bread
Softened butter

Preparation

Preheat a griddle or skillet to medium high heat. Place 4 slices of the rye bread on a work surface and spread with 1/2 ounce of the dressing. Place 4 ounces of corned beef on each sandwich. Then put 2 ounces of sauerkraut on top of the meat and a piece of swiss cheese. Take the remaining slices and spread the remaining dressing on the bread and top off the sandwich.

Now spread one side of the bread with the softened butter and place the sandwich butter side down on the griddle then spread some more butter the other side of the bread. Grill the sandwich until the bread is dark golden brown and turn the sandwiches over to grill the other side. Once the remaining side is dark golden brown remove from the griddle and serve. Enjoy!
