Super Double Cheese Mac & Cheese

This is a perfect comfort food, it is hard to beat good old mac & cheese when you need comfort. There is just something about hot bubbling cheese combined with the macaroni that just makes life feel better when you need some comfort. Now serve the mac & cheese with some potato salad and ribs and you have the trifecta of comfort. Time to make some macaroni and cheese!

Super Double Cheese Mac & Cheese

Yield 5-6 servings

Ingredients

1 pound extra sharp cheddar cheese, grated
1 tablespoon bacon grease (from hickory smoked bacon)
2 tablespoons all purpose flour
2 cups whole milk, warmed
1 clove garlic, minced
8 ounces elbow macaroni, uncooked

Preparation

In a small sauce pan warm the milk and keep warm. Bring a medium sauce pan to medium high heat and add the bacon grease. Once the bacon grease is melted whisk in the flour to make a roux and let cook for a minute. Now slowly whisk the warm milk into the roux to make the sauce base. The sauce will be thick. Now whisk 3/4 of the cheese into the sauce then add the garlic and let cook for 2 minutes on medium heat make sure to stir the entire time then reduce heat to low and keep sauce warm.

Preheat oven to 400F

In a 6 quart pot bring lightly salted water to a boil and cook the macaroni for 6-8 minutes. When the macaroni is done cooking drain the macaroni. Now place the macaroni back into the pan and stir in the cheese sauce add salt and pepper to taste, then place the macaroni and cheese into a baking dish. Sprinkle the remaining cheese over the top and bake the macaroni and cheese uncovered for 30 minutes. Remove from oven and serve piping hot. Enjoy!
