The KISS (Keep It Super Simple) Chicken Caesar Salad

It is Friday and I needed to keep it simple for dinner so I decided to take the KISS philosophy and Keep It Super Simple with a Chicken Caesar Salad. A nice healthy, nutritious, and flavorful! It is very comforting in the fact it is easy to make and I really love Caesar salads.

Yield 4 Dinner size salads

Ingredients

8 ounces boneless skinless chicken breasts
1 cup balsamic salad dressing
1 head romaine lettuce
2 ounces grated parmesan cheese
4 ounces salad croutons
4 ounces Ken's Creamy Caesar Salad Dressing

Preparation

Place the chicken and balsamic dressing in a container and marinate the chicken for at least 4 hours, overnight is better. Wash the lettuce and cut into bit size pieces and put in a bowl and refrigerate while cooking the chicken. Set the broiler on high and broil the chicken for 5 minutes on each side. When the chicken is done set aside to rest for 2-3 minutes.

While the chicken is resting, in a large salad bowl add the lettuce, cheese, and croutons. Drizzle on the Creamy Caesar Dressing and toss the lettuce until welled coated. Divide the salad onto four plates, then cut the chicken into 1 inch pieces and place on top of the lettuce and serve. Enjoy!
