Southern Style Bacon Wrapped Roasted Chicken with Roasted Sweet Potatoes Part 2

Southern Style Bacon Wrapped Roasted Chicken

Yield 6-8 servings

Ingredients

1 roaster chicken, brined
5 strips bacon

Preparation

Remove the chicken from the brine we marinated it in from part 1 and pat dry. Now place the chicken in a roasting and tuck the wings under. Now lay the bacon across the chicken cross wise and use wooden toothpicks to secure the bacon to the chicken. Your chicken will look like frankenstein, but don't worry,

Once the chicken is wrapped place it in the roasting pan and roast in a 425F oven until chicken reaches an internal temperature of 165F about 75-90 minutes depending on the size of your chicken.
Make sure to place a 1/2 inch of water in the bottom of the roasting pan and be sure to baste the chicken every 15-20 minutes until done. Enjoy!
