15 bean Chicken & Chorizo Soup

I am a huge lover of beans and 15 bean soup is a favorite of mine. The addition of chicken and chorizo makes it that much better. The bean lovers in your family really enjoy a bowl of this delicious soup. The combination of the beans, the spice of the sausage, and the chicken flavor along with the spices will induce comfort almost immediately. I hope you enjoy the soup as much as I do.


15 bean Chicken & Chorizo Soup

Ingredients

1 pound bag of 15 bean mix, soaked overnight

4 cups chicken stock

4 cups beef stock

1 tablespoon butter

1 large sweet onion, diced (about 2 cups)

2 cloves garlic, minced

2 carrots, peeled and diced

2 stalks celery, diced

12 ounces boneless skinless chicken breast, cut into 1/2 cubes

8 ounces chorizo sausage, cut into 1/4 slices

2 bay leaves

1 teaspoon rubbed sage

1 teaspoon fennel seed

1 teaspoon cumin

2 teaspoon sweet smoked paprika

Salt & pepper to taste

Preparation

Heat a 6 quart stock pot to medium high heat. Place the sausage in the stock pot and saute until lightly browned. Add the chicken and continue to saute until chicken is lightly browned,  add butter. Once the butter melts add the onions, carrots, celery, garlic, and saute the vegetables for 2-3 minutes. Now add the seasonings and saute for 2 more minutes.

Add the chicken and beef stock to the stock pot along with the beans. Bring the soup to a boil, then reduce heat to low and let soup cook until the beans are tender about 45 minutes to 1 hours. Add salt and pepper to taste, then serve.
