J's Oatmeal Bread

This bread has the perfect combination of flavors and texture to bring instant comfort. The oats combined with just the right amount of molasses come together to make all your troubles melt away, it work for me everytime. I just had a slice as the bread was fresh from the oven and I feel great right now.


J's Oatmeal Bread




This one of my mom's recipes and it is great. Mom is a great pastry chef by the way, she studied under Roland Mesnier a former White House Pastry Chef. This bread is really, really good! Give it a try and let me know what you think. Enjoy!

J's Oatmeal Bread

Ingredients

2 cups boiling water
1-1/2 cups oats (I use steel cut)
4 cups all purpose flour or bread flour
1 packet dry active yeast (1/2 ounce cake yeast)
2 tablespoons oil
1/4 cup molasses (I highly recommend Blackstrap molasses)

Preparation

In a mixing bowl pour the boiling water over the oats. When the oats have cooled to lukewarm add the yeast and 2 cups of the flour. Let the this rise for 1 hour or until doubled.

Then punch down the dough and work in the rest of the ingredients. Need the bread for 10 minutes, then form into one large loaf or two small loafs and rise again, for about 45 minutes or until doubled.

Place the bread in the oven and bake at 350F for 40-60 minutes. Cool bread on baking rack for 30 minutes (if you can wait that long, I can't) before eating. Enjoy!
