Hearty Onion Soup

One of Mom's neighbors bought a large bag of onions and brought a few of them to use. I always say if life gives you onions make onion soup and so I did. It is a windy day today so I think soup would be perfect for dinner. This is new recipe that I put together as I made the soup, it is what I call an improvised recipe.

Hearty Onion Soup

Yield 4-6 servings


Ingredients
3 large onions, julienned
2 cloves garlic, minced
1 tablespoon butter
1 tablespoon brown sugar
1 tablespoon white Balsamic vinegar
1 bay leaf
1/2 teaspoon thyme
1/2 teaspoon rubbed sage
1/4 teaspoon celery seed
4 cups beef stock
2 cups chicken stock
Salt & pepper to taste

Preparation 

Heat a 4 quart stock pot to medium high heat. Add the butter and allow to melt, then add the onions. Saute the onions until they become translucent about 5 minutes then add the brown sugar and vinegar.

Cook onions until some of the onions start to caramelize. Now add the thyme, rubbed sage, celery seed and saute for 1 more minute to allow the herbs to release the flavor. Now deglaze the pot with 1 cup of the beef stock. Once the pan is deglazed add the rest of the stock, bay leaf, and bring the pot to a boil. Once the soup just begins to boil reduce the heat and simmer for 1 hour. Add salt and pepper to taste and soup is ready.

Make sure you remove the bay leaf before serving and I recommend a nice crusty multi-grain bread to accompany the soup. Enjoy!
