I started thinking about this soup while watching
“Fear and Loathing in Las Vegas” a great movie adapted from the great Hunter S.
Thompson book of the same title.
Gonzo Garbanzo Chicken & Sausage Soup |
Since this soup has a kind of unique and
bizarre and raw element to it like Gonzo journalism created by Hunter S.
Thompson. Thus, Gonzo Garbanzo soup was born.
Gonzo Garbanzo Chicken & Sausage
Yield 6 - 8 servings
Ingredients
3 organic chicken thighs (skin and bone removed
but not the fat, cut into 1 inch chunk)
3 links organic Italian sausage (cut into ½ inch
slices and rolled into cherry tomato size balls)
1 organic sweet onion, chopped
3 organic carrots, peeled and cut into ½ inch
pieces
2 organic celery stalks, halved, and cut into ½
inch chunks
4 cloves organic garlic, chopped
15 ounce can organic garbanzo beans (do not drain
use liquid)
28 ounce can organic diced tomatoes (do not drain
use liquid)
4 cup organic beef stock
1 teaspoon organic sage
2 tablespoons organic all purpose unbleached
flour
1 teaspoon sea salt
1 teaspoon black pepper, freshly ground
Preparation
Heat a 6 - 8 quart stock pot to high. Add the
sausage and chicken and saute for 1-2 minutes. Now add the onions, garlic,
celery, and carrots to the pot and saute until onions are translucent.
Add the flour and stir until the meat and
vegetables are coated. Then deglaze pan with the beef stock. Now add the can of
tomatoes with liquid, the garbanzo beans with liquid, sage, salt, and pepper.
Bring the soup to a boil then reduce heat to low
and cook for 60 minutes. Adjust the salt and pepper to taste and serve with a
good crusty bread.
