Pork Tenderloin w/ Onions & Mushroom Gravy

If your a pork fan you should enjoy this dish. It is another of my impromptu recipes. Mom had a rough morning and I want to pick up here spirits with a nice dinner. I took a look to see what we had and the end result was Roast Pork Tenderloin with an Onion Compote and Mushroom Gravy! Yes, it was just what the doctor ordered some good old fashion stick to your ribs Comfort Food!

The recipe is very simple to make and doesn't take much time to whip up. Here is the recipe.

Roast Pork Tenderloin w/ Onion Compote and Mushroom Gravy



Ingredients
1 Pork Tenderloin
1 Large sweet onion
4 Baby Portabellas
2 cloves garlic
2 cups Pork Gravy
1 teaspoon salt
1 teaspoon pepper
1 tablespoon olive oil

Preparation

Preheat oven to 400 F degrees and heat a cast iron or other oven proof pan to high heat.

Rinse off pork, pat dry and rub half the salt and pepper on each side of the pork. Add 1/2 tablespoon of oil to the pan and sear both side until you get a nice light brown color. Then place the pan in the oven for 30 minutes to roast.

While the pork is roasting bring a large skillet to high heat and add the remaining 1/2 tablespoon oil. Saute the onions until they are slightly caramelized (see picture below), remove from pan and set aside.

Now saute the mushrooms in the same pan as the onions until they are nice and browned (see picture below) and keep then warm and bring your pork gravy to warm.

Now remove the pork from the oven it should be a nice browned color (see picture below), let it rest for 5-10 minutes before slicing. Add the mushrooms to the pork gravy and let simmer for 10 minutes.

To serve place a small pile of onions on the plate shingle 3-4 slices of pork over the onions then ladle some mushroom gravy over the pork and Enjoy!!
