I love beans just about any way you cook them but there
something about baked beans that I really love. In the summer with burgers and
dogs or in the dead of winter with pork loin and baked apples. I just love
them!

Baked Beans - Slow Cooker Style
Yield 8-10 servings
Ingredients
1 pound dried pinto beans
(Wash beans place in bowl of water so the beans are covered by 3 inches
of water and soak for at least 8 hours, overnight better, add 1 tsp baking soda
to water when soaking)
1o slices organic hickory smoked bacon cut into 1/2-inch
pieces, cooked and drained
8 cups water
1 ¼ cups organic catsup
1 large organic sweet onion, chopped
1/4 cup maple syrup
¼ cup organic dark brown sugar
¼ cup organic apple cider vinegar
¼ cup organic stone ground mustard
2 tablespoon colman's mustard
¼ cup organic dark molasses
3 bay leaves
4 cloves organic garlic, chopped
½ teaspoon salt & pepper
Preparations
Set cooker to low
Heat a skillet to medium high heat. Saute onions, bacon, and
garlic until bacon is cooked and onions are browned. Combine all the
ingredients in a large bowl. Place the bean mixture into the slow cooker and
cook on low for 10-12 hours until beans are tender and sauce is thick and tasty.
