Broiled Sesame Salmon

I got a great deal on Salmon at the store the other day and had a taste for something asian so I pulled this dish together. It is super easy a great dish for beginners and super flavorful. It also a great way to get health fish into non-fish eaters i.e. those who claim not to like the taste of fish will love this.

Beer Brats with Caramelized Onions

Spring is in the air so it must be grill time!! I had a taste for sausages so sausages it is for dinner. I love sausages or as Anthony Bourdain would say “Meat in tube form!” This recipe can be done either in a pan on the stovetop or on the grill. Onion & Bacon Irish Soda Bread

I know that the baking enthusiasts took one look at the title and said Irish Soda Bread is supposed to have raisin and be sweet. This is my savory twist on an Irish classic. I love soda bread and give the Irish a salute the for this great bread. It is quick and I mean quick. It took me 70 minutes to make this loaf of bread and that includes 60 minutes of baking.

As I have said many times there is something about the heavenly smell of fresh bread that brings instant calm and comfort. I also believe in the healing power of fresh bread. Hot out of the oven, nice steamy and warm with some butter melting in the nooks. I have seen spirits lifted in minutes, headaches forgotten about, and people feeling loved. If you have someone that needs some comfort, love and there spirits lifted then make a loaf of this bread and their world will feel better.

Egg Bread

The smell of fresh baked bread has such a calming and healing effect, I love fresh baked bread! This is one of the first breads I learned to make and I really like it. Of course you will hear me say that many a lot! What I like about egg bread is the light airy and of course that great egg taste. Plus egg bread is great for french toast!

Rustic Backcountry Raisin Scones

I woke up this morning in need of something light, flaky, and sweet to put me in a comfortable place for a busy day. I started looking around we had some heavy cream left over from the French Silk Pie and some raisins from the Coconut Curry Chicken and it came to me, Scones! This a recipe that my great grandmother handed down and it is really taste and most importantly it is easy. Give them a try you'll love them!

This is a great dinner for any day of the week and spectacular for the weekends. This is a great way to make a roasted chicken taste even better. Plus the leftover makes great soup and an unbelievable chicken salad.

The first part of this great dish is brining the chicken to help the chicken stay moist, juicy and chicken-licious good! If you have not brined meat in the past, now is the time to try. 5 Grain Blackstrap Bread

I had the baking bug today and had a taste for bread. I developed this recipe this afternoon and if I do say so myself it turned out to be very good. It has a nice sweet nutty flavor with a nice grainy texture to complete the all around flavor experience. This is a variation of J's Oatmeal Bread that can be found here. This is a good bread for toast, french toast, and great for any kind of nut butter and fruit spread sandwich, like peanut butter and jelly, or almond butter and jam. Enough gabbing and lets make some bread.

Cooking For Friends

If you've been reading the blog you'll know I'm in the northeast looking for work and have had to leave my home in Augusta, GA. I have been writing this blog to help keep my sanity and keep my spirits up. Well, I've been doing a lot of comfort food cooking for the blog, the cook book I just published, but most of all for me.

As I have been going through these recipes and doing all this cooking. I remember all the great times I had cooking many of these dishes for my friends in Augusta, GA. Having cook outs with Becks, having great conversations about blues music with Marion (Who happens to be a walking encyclopedia on the subject). Spend great times at Tire City Potters discussing art with all the incredibly talented artists. Having drinks at bee knees with Rachel & Kelly. Tom with dry british wit and chiggy attitude, stephanie, maddie, sadie, ben, jonathan, corey, shashir and his beautiful family, the list is long.

I really have some great friends that I miss so dearly and love so much. I have had many great times cooking for them, with them, and them feeding me. It is times like these that remind me of what a powerful combination that love, food, and friendship makes. How it can transform people, places and events. I wish everybody on the planet could experience the love I have. It might be a much better place, less fear, less hate, less judgment, and more treating people as they should be for who they are.

I hope a day comes, and comes soon that I will have a job and home again so I can go see my dear friends once again and experience the love they give the world.

Super Double Cheese Mac & Cheese

This is a perfect comfort food, it is hard to beat good old mac & cheese when you need comfort. There is just something about hot bubbling cheese combined with the macaroni that just makes life feel better when you need some comfort. Now serve the mac & cheese with some potato salad and ribs and you have the trifecta of comfort. Time to make some macaroni and cheese!

Today is the day for some RIBS!!!! I have been salivating over these ribs like one of Pavlov's dog's. The kitchen has the sweet aroma of BBQ wafting in the air like an ethereal cloud of delight. Tender succulent meat cooked to perfection just calling me, teasing me, I can't take it anymore I need ribs now!!! I hope it isn't to obvious I like ribs. Plus there is some Super Double Cheese Mac & Cheese and Southern Style Redskin Potato Salad to go with it!! I've become so delirious with joy and delight I don't know how to act! Southern Style Redskin Potato Salad

Here we go with another big weakness of mine Potato Salad, in particular Redskin Potato Salad. If you are a regular reader You know I'm getting a Southern Rib dinner together for tomorrow night at potato is a crucial part of the equation. There is something that is so comforting about potato salad. It is just a perfect combination of great flavors in all it's starchy goodness. The most important part of making a great potato salad is to make it one day in advance. Well lets get some potato salad made, I'm getting hungry!

Southern Style Down Home Rib Dinner Part 2 Brine O' Mine

Hi Folks in part 2 we will brine our succulent pork spareribs. I cannot emphasis enough how great brine is when cooking meats. I guess my brine slogan would be "Brine, it's not just for pickles and corned beef" I just love how it helps keep meat nice so moist and tender, my mouth just waters talking about it. Enough rambling let us brine some ribs.
