Grilled Bacon Wrapped Chicken

Here is a great grill recipe from The Comfort Food Chef. I had a taste for chicken and a few leftovers in the fridge that needed to get used. I ended up this this light, filling, tasty dinner. I had a couple chicken breasts, a few pieces of bacon and some bbq sauce leftover from the hawaiian ribs. A trifecta of flavor waiting to be combined for grilled perfection.

Egg Bread

The smell of fresh baked bread has such a calming and healing effect, I love fresh baked bread! This is one of the first breads I learned to make and I really like it. Of course you will hear me say that many a lot! What I like about egg bread is the light airy and of course that great egg taste. Plus egg bread is great for french toast!

This is a great dinner for any day of the week and spectacular for the weekends. This is a great way to make a roasted chicken taste even better. Plus the leftover makes great soup and an unbelievable chicken salad.

15 bean Chicken & Chorizo Soup

I am a huge lover of beans and 15 bean soup is a favorite of mine. The addition of chicken and chorizo makes it that much better. The bean lovers in your family really enjoy a bowl of this delicious soup. The combination of the beans, the spice of the sausage, and the chicken flavor along with the spices will induce comfort almost immediately. I hope you enjoy the soup as much as I do.

5 Grain Blackstrap Bread

I had the baking bug today and had a taste for bread. I developed this recipe this afternoon and if I do say so myself it turned out to be very good. It has a nice sweet nutty flavor with a nice grainy texture to complete the all around flavor experience. This is a variation of J's Oatmeal Bread that can be found here. This is a good bread for toast, french toast, and great for any kind of nut butter and fruit spread sandwich, like peanut butter and jelly, or almond butter and jam. Enough gabbing and lets make some bread.

Southern Style Down Home Rib Dinner Part 4 The Dinner!!

Finally everything has come together for my trifecta of comfort! A southern style rib dinner with all the fixin's macaroni & cheese and potato salad. I'm in heaven and all the world seems perfect if not for just a short while. The tender succulent ribs, cheesy goodness, followed up by some sweet starchy greatness of potato salads. This is a perfect comfort food, it is hard to beat good old mac & cheese when you need comfort. Here we go with another big weakness of mine Potato Salad, in particular Redskin Potato Salad. If you are a regular reader You know I'm getting a Southern Rib dinner together for tomorrow night at potato is a crucial part of the equation. There is something that is so comforting about potato salad. It is just a perfect combination of great flavors in all it's starchy goodness. Hi Folks in part 2 we will brine our succulent pork spareribs. I cannot emphasis enough how great brine is when cooking meats. I guess my brine slogan would be "Brine, it's not just for pickles and corned beef" I just love how it helps keep meat nice so moist and tender, my mouth just waters talking about it. I've had a deep desire for a good old fashion down home southern style rib dinner. I'm talking the whole nine yards; macaroni and cheese, potato salad, baked beans, and of course some succulent falling off the bone spare ribs. I am currently in the north so firing up the bbq pit is out of the question. Therefore, these will be oven style ribs which when done right can be just as good as cooked in a bbq pit.

The first step is to brine the ribs. Many of us have forgotten the value of brine or don't know about the miraculous tool that brine is when working with meat. Whether it is pork, beef, chicken, lamb, and even fish. Here is a really good and simple brine recipe that works great for pork, ribs in particular.

I know many of you are saying "That looks like swamp water", etc.. Well let me tell you that this beautiful salty yet sweet ebony hued nectar of the BBQ gods will be one of the best things to happen to your ribs. EVER! Now let me tell you how to make this savory bit of delight.

When I moved to the south I gained a unique appreciation for the sweet potato. I really love them and sweet potato fries have got to be one of my favorite ways to eat them. I find that anything sweet ,even a potato can bring a lot of comfort and quickly. I like this particular recipe because the are done in the oven and you don't have to deal with the deep fryer.
