Down South Moonshine Brine

If you have not had barbeque in the south you must do so sometime in your life, put it on the bucket list!! Well today I'm going to show all my southern chops with an great brine. As some in the south would say that this brine makes you ribs so good, "That you tongue will slap your teeth right out your mouth"! Maple Roasted Sweet Potatoes

As a kid growing up in the north, sweet potatoes got no respect at all. When I moved down south I was witness to the sweet potato being paid a lot of attention to, almost like it was put on a pedestal and praised. This dish is a fusion of my northern roots, the maple syrup and my new found love for the sweet potato.

Southern Style Bacon Wrapped Roasted Chicken with Roasted Sweet Potatoes Part 1

This is a great dinner for any day of the week and spectacular for the weekends. This is a great way to make a roasted chicken taste even better. Plus the leftover makes great soup and an unbelievable chicken salad.

The first part of this great dish is brining the chicken to help the chicken stay moist, juicy and chicken-licious good! If you have not brined meat in the past, now is the time to try. I know some people think it will make the chicken salty, but it won't. It will make your chicken taste great! Let's brine some chicken!

Southern Style Down Home Rib Dinner Part 4 The Dinner!!

Finally everything has come together for my trifecta of comfort! A southern style rib dinner with all the fixin's macaroni & cheese and potato salad. I'm in heaven and all the world seems perfect if not for just a short while. The tender succulent ribs, cheesy goodness, followed up by some sweet starchy greatness of potato salads. Let's get eating!

Today is the day for some RIBS!!!! I have been salivating over these ribs like one of Pavlov's dog's. The kitchen has the sweet aroma of BBQ wafting in the air like an ethereal cloud of delight. Tender succulent meat cooked to perfection just calling me, teasing me, I can't take it anymore I need ribs now!!! I hope it isn't to obvious I like ribs. Plus there is some Super Double Cheese Mac & Cheese and Southern Style Redskin Potato Salad to go with it!! I've become so delirious with joy and delight I don't know how to act! Southern Style Redskin Potato Salad

Here we go with another big weakness of mine Potato Salad, in particular Redskin Potato Salad. If you are a regular reader You know I'm getting a Southern Rib dinner together for tomorrow night at potato is a crucial part of the equation. There is something that is so comforting about potato salad. It is just a perfect combination of great flavors in all it's starchy goodness. The most important part of making a great potato salad is to make it one day in advance. Well lets get some potato salad made, I'm getting hungry!

Southern Style Down Home Rib Dinner Part 2 Brine O' Mine

Hi Folks in part 2 we will brine our succulent pork spareribs. I cannot emphasis enough how great brine is when cooking meats. I guess my brine slogan would be "Brine, it's not just for pickles and corned beef" I just love how it helps keep meat nice so moist and tender, my mouth just waters talking about it. Enough rambling let us brine some ribs.

I've had a deep desire for a good old fashion down home southern style rib dinner. I'm talking the whole nine yards; macaroni and cheese, potato salad, baked beans, and of course some succulent falling off the bone spare ribs. I am currently in the north so firing up the bbq pit is out of the question. Therefore, these will be oven style ribs which when done right can be just as good as cooked in a bbq pit.

The first step is to brine the ribs. Many of us have forgotten the value of brine or don't know about the miraculous tool that brine is when working with meat. Whether it is pork, beef, chicken, lamb, and even fish. Here is a really good and simple brine recipe that works great for pork, ribs in particular.

I know many of you are saying "That looks like swamp water", etc.. Well let me tell you that this beautiful salty yet sweet ebony hued nectar of the BBQ gods will be one of the best things to happen to your ribs. EVER! Now let me tell you how to make this savory bit of delight.

I love beans just about any way you cook them but there something about baked beans that I really love. In the summer with burgers and dogs or in the dead of winter with pork loin and baked apples. I just love them!

Southern Style Sweet Potato Fries

When I moved to the south I gained a unique appreciation for the sweet potato. I really love them and sweet potato fries have got to be one of my favorite ways to eat them. I find that anything sweet ,even a potato can bring a lot of comfort and quickly. I like this particular recipe because the are done in the oven and you don't have to deal with the deep fryer.
