Ingredients
1 gallon water
1/2 cup kosher salt
1/2 cup brown sugar
1/4 cup cider vinegar
2 cloves garlic
4 whole peppercorns
Preparation
Add the ingredients to the water and heat to lukewarm and dissolve the salt and sugar. Allow the brine to cool to room temperature before placing the chicken in the brine.
In a 6-8 quart stock pot place your chicken in the bottom of the pot and pour the brine over the chicken and place in refrigerator overnight.
