Southern Style Sweet Potato Fries

When I moved to the south I gained a unique appreciation for the sweet potato. I really love them and sweet potato fries have got to be one of my favorite ways to eat them. I find that anything sweet ,even a potato can bring a lot of comfort and quickly. I like this particular recipe because the are done in the oven and you don't have to deal with the deep fryer.

Southern Style Sweet Potato Fries

Yield 4 servings

Ingredients

2 Sweet Potatoes
2 tablespoons butter
2 tablespoons bacon grease (new studies say it's good for you, the south has known for generations)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon
1/4 teaspoon chili powder
1/8 teaspoon cumin
1/4 old bay seasoning

Preparation

Preheat oven to 450F

Peel the sweet potatoes and cut into 5 lengthwise slices, then cut into 1/4 inch strips to make the fries, place in a large bowl and set aside. In a small sauce pan melt the butter then add the bacon grease. Let the butter and the fat get medium hot. Now add the seasonings and stir to mix well.

Pour the butter and seasoning mix over the sweet potatoes and toss to make sure all the potatoes get coated. Now place the potatoes on two baking sheets, the potatoes should not be touching.

Place the potatoes in the oven and bake for 15-20 minutes. After 10 minutes in the oven take the fries out and stir around so they don't burn. Once the potatoes are nice crispy and browned remove from oven and serve hot. Enjoy!
