Over the last several years bread has been getting a bad rap, high in carbohydrates, etc. There are many so-called health experts and dieticians that have kept these health concerns alive. The question I have is if bread is so bad then how come man has been making, baking, and eating bread for thousands of year. Bread has been considered an important staple of our diet for thousands of years. In fact bread has been considered so important that people developed a liquid form of bread, called beer, I think you're familiar with beer. I think most of these so-called health experts are only expert in distorting the truth.
I find that bread has many great health factors not just the nutritional aspects, vitamins, fiber, etc, which are good, but there are greater benefits. The greatest benefit in my opinion being comfort, that feeling of satisfaction and calm when eating some fresh hot bread with some butter or whatever your desired topping of choice is. There is something almost magical about the calming effects that bread can have on us. That soothing almost ethereal aroma that arise out of the oven as if divinely conceived by the bread gods.
The symphony of crackling sounds that emanate from the crust as the bread is being sliced. The supple texture that wakes up our mouth to a wonderful delight. That nutty grain flavor of the flour as it compliments the ever so slight musty flavor of the yeast. All these flavorful combinations accompanied with that fresh out of the oven warm. It has the power to bring instantaneous calm, like being a baby cradled in mothers arms. The kind of comfort that can make the worst of days melt away into oblivion.
When you really think about it, the power that bread has to bring calm, comfort and peace. It has always been astounding to me. How bread can not only calm our rattled nerves, but also bring us a healing comfort is really incredible. Then factor in the love that went into making and baking bread increases that healing power exponentially. Even though I have been cooking for over 30 years I am still in awe at the healing power of food.
